Fig & Strawberry Overnight Oats | {Mint~Cardamom}

Okay, this was pure heaven to bite into! I'm pretty proud of this recipe that came to me as I was readying for sleep and dreaming up what to do with the figs and strawberries I had in the fridge. Figs and Strawberries just sounded good, I could almost taste it just thinking about it... like a jam or something I tasted before. But what herbs or spices to add? I recalled a strawberry pie with mint that I made a long time ago, so mint it was. Mint naturally lead to cardamom, adding a subtle complexity that brings it all together: minty, citrusy, spicy, earthy, nutty, and a hint of floral... all around amazing!
The possibilities with overnight oats are endlessly delicious! I heard that it's best to start your day with a high protein breakfast (rules!), but I realized that I really love enjoying a little of the sweet taste from fruit in the mornings; it feels nourishing and nurturing and makes me happy heading into my day. So most of my mornings start with some form of oats and 2 hardboiled eggs.

Kitchen Tools:
1 16 oz Mason jar
Yield | 1 serving
Ingredients:
1/3 cup Organic Rolled Oats
1/2 cup Plain Kefir
1/4 cup Light Coconut Milk, from a can
1 1/2 tbsp Chia Seeds
1 1/2 tbsp Ground Flax Seed
1 tsp Raw Honey (local if possible)
1 tsp Vanilla extract
1 tsp Cardamom
1 1/2 tsp Fresh Mint
1/8 tsp Sea or Pink Salt
2 Fresh Mission Figs, finely chopped
1 cup Strawberries, sliced
2 tbsp Almonds, chopped
Instructions:
Add all of the ingredients except the strawberries and almonds into you mason jar and mix. Add the strawberries last. Place the top on the jar and place in your fridge overnight. Wake up and take your jar out of the fridge and give it some time to come to room temp if you can.... and give yourself time to enjoy eating and savoring this delicious start to your day!
Don't cheat yourself! Alway eat slowly, chew thoroughly and sensually, and give yourself the full mouth experience!
